Glossary 

Cereals - Sum of wheat, barley, oats, and other cereals  

Eastern Scotland – 2021 Internation Territorial Level (ITL) 2 region containing local authorities City of Edinburgh, Clackmannanshire, East Lothian, Falkirk, Fife, Midlothian, Perth and Kinross, Stirling, and West Lothian. 

Fully organic land - Land which has been approved by certifier bodies after a conversion process  

Highlands and Islands – 2021 ITL2 region containing local authorities Argyll and Bute, Highland, Moray, Na h-Eileanan Siar, Orkney Islands, and Shetland Islands  

Organic land in-conversion - Land undergoing a conversion process to becoming organic.  

North Eastern Scotland – 2021 ITL2 region containing local authorities Aberdeen City and Aberdeenshire. 

Organic operator - An individual/farm/organisation involved in the production and/or processing of organic farming. 

Organic processor - Involved in the processing of organic crops/livestock. Examples include abattoirs, bakers, storers, and wholesalers. 

Organic producer - Involved in the production of organic produce such as farms.  

Organic producer and processor - Involved as both a producer and processor of organic produce.  

Other arable crops - Made up of fodder, silage, oil crops, and others.  

Southern Scotland – 2021 ITL2 region containing local authorities Dumfries and Galloway, East Ayrshire, North Ayrshire, Scottish Borders, South Ayrshire, and South Lanarkshire  

West Central Scotland – 2021 ITL2 region containing local authorities East Dunbartonshire, East Renfrewshire, Glasgow City, Inverclyde, North Lanarkshire, and Renfrewshire.
