Organic operators 

In 2025, there were 529 organic operators registered in Scotland, a decrease of 1 since 2024, and the same number as there was in 2021.

An organic producer is an operator involved in the production of organic food (for example, a farm) while an organic processor is only involved in the processing of the food (for example, an abattoir).

Of the 529 organic operators, 396 (75%) were organic producers, 118 (22%) were organic processors, and 15 (2.8%) were producers and processors.
