You asked how many people are on the Scottish Government payroll full and part time.

The number of full time and part time Scottish Government staff is published within the Annual civil service statistics available here Civil Service statistics - GOV.UK

The information can be found on table 37 and shows that as at 31 March 2025 there were 7,780 full time and 1,515 part time civil servants within the Core Scottish Government.
