The answer to your question is:
The term “day to day” spending refers to current expenditure (as used in the GERS publication). Definitions of function of government categories and expenditure types are set out in Chapters 2 and 3 of the COFOG Manual of Sources and Methods Manual on sources and methods for the compilation of COFOG statistics — Classification of the Functions of Government (COFOG) — 2019 edition - Products Manuals and Guidelines - Eurostat (europa.eu) , and Chapter 3 of the 2010 European System of Accounts (ESA 2010) Manual European system of accounts - ESA 2010 - Products Manuals and Guidelines - Eurostat (europa.eu).
Figures for the Scottish Government’s current and capital expenditure for 2020-21, disaggregated by function, can be found in the table below. This is consistent with Table 3.8 in the latest GERS publication.
