Please provide NHS staffing levels for the last three years, not including posts filled by the Army.

The information you have requested is published in NHS Education for Scotland's (NES) latest official quarterly NHS Scotland Workforce report: Overall Staff in Post | Turas Data Intelligence (nhs.scot)
This report profiles the number of staff employed directly by NHS Scotland Health Boards, at quarterly intervals up to June 2021. Non-NHS personnel such as from the military are not included within this data.
Overall whole time equivalent staffing levels at June 2019-2021 is set out here:
June 2019 - 140,327.0
June 2020 - 147,309.9
June 2021 - 152, 597.1
The next quarterly report, for staffing levels at September 2021, will be published by NES in early December 2021.
