Monitor shellfish harvesting areas to ensure shellfish are fit for human consumption. This includes responsibility for the designation of harvesting areas, setting standards and reporting the classification of harvesting areas. The degree of shellfish contamination monitored determines the amount of depuration (purification) required before the produce may be commercially marketed.
